Simple potato recipe

Here's a nice way of doing up potatos that are too small to bake or peal for mashed potatos. Cut them in half lengthwise, pierce the skin as you would for a baked potato. Melt a couple tablespoons of butter bacon drippings or beef drippings in a pan. Put in the potatos and pour in about a quarter cup of water. Quickly cover the pan and turn the heat down to low. Go off and make the coffee put bacon in the oven or something else. Come back when the sound in the pan has deminnished some. Turn the potatos and add a couple tablespoons water. Replace the cover as before. Keep turning and adding water here and there until the potatos are soft and brown on the cut side. The skin will krinkle a bit. You can do 2 or 3 potatos in one pan depending on how big your pan is. I'd not do this in teflon either stainless steal or cast iron. This sounds more fussy than it really is. A baked and fried potato all at once without loads of grease. Enjoy. Tiffany
